Where do meatballs come from? Well, apparently no-one actually knows... Whilst recipes go back to the Romans, some historians believe the first meatballs were made in Persia and are still around today as kofta. Whether they are Italian or Persian- they are definitely always on our crave list, and we are so excited to share this warm and hearty dish with you! Meatballs are so loved that nearly every culture now has their own type of meatball! This is a filling dish so there might be some extra to re-heat tomorrow at lunch.

Teriyaki Aubergines Steaks with Brown Rice and Asian Salad
Aubergines (also known as egg plant) are a phenomenal vegetable for absorbing flavour, but did you know that in botanical terms, they are actually classed as a berry?! This dish is brimming with flavour, fibre, and micronutrients. Try using this aubergine technique with other flavours such as sriracha, miso, or harissa.
Baked Salmon with Kale & Mint Roast Potatoes
The key to flavour in this dish is baking the salmon and the baby potatoes together. This really fuses the tastes of the dish together. The kale is a unique side dish which makes use of our favourite Wicklow kale with the added bite of a mustard and lemon juice mix. Tangy and yummy!
Classic Niçoise Salad
Salad Niçoise hails from Nice, on the Mediterranean Sea, though like so many foods we enjoy here at DropChef, we have tweaked it a bit to adapt it to our style. According to our Chef the French Niçoise salads are made with baby potatoes and served with anchovies. We wanted to add an exotic touch so we went with vitolette potatoes and smoked salmon :)
Almond-Coated Chicken with Bang Bang Yoghurt Sauce & Stir Fried Greens
Crispy chicken fillets coated in a crunchy almond crust. Served with a zesty blend of yoghurt, sriracha, and spices, then stir-fried green beans and baby spinach, and paired with nutty brown rice, this dish balances smoky, spicy, and savory flavors for a satisfying meal.
