Chicken Satay with Basmati Rice & Fresh Cucumber
These flavourful, Thai-inspired chicken skewers are marinated in a delicious, spicy peanut sauce, then grilled and served with a satay sauce with coconut milk and garlic. Chefs Tip: Put the skewers in a bowl of water while you prepare the recipe so that they dont burn when you cook the chicken.
Light and Healthy Chicken Alfredo
This alfredo is a much lighter take on the traditional version, using low fat creme fraiche in place of cream, and reducing the amount of parmesan cheese. There is also the addition of chicken, which provides some protein, and semi-sundried tomatoes for flavour and freshness!
