JD Roussouw is a South African winemaker. He recently won South African winery of the year for his Wildeberg Winery.He makes the Secretary Bird Wines at the winery as well, from grapes he has sourced from all over the Western Cape of South Africa. The results are brilliant.
Tasting Note:
This is a juice, generous and rich plummy merlot with oodles of fruit, lovely spice and a lingering finish. We have paired it with Hoisin wraps this week as the Hoisin and generosity of fruit in this wine will work really well together.

Mont Rocher Malbec
Mont Rocher Malbec comes from the Aude Valley area of Southern France. Winemakers are travelling further South in France these days in order to find untapped landscapes for which to plant grape varieties that are resistant to the increasing temperatures of the sun. The valley is a spectacular landscape to look at and the wine is equally enjoyable. Tasting Note: Malbec is to Beef what Laurel is to hardy or Salt is to pepper. They go great together and are awesome when paired together. This is deep in colour, with ripe plums, blackberries, and cherries on the nose. It is rounded with big tannins. The finish is smooth and succulent. Food Match: We have paired this with Irish Beef Burger with Ballymaloe Relish & Potato Wedges
Clos de Torribas Crianza
Fermented slowly in stainless steel tanks – skin soak of around 15 days. The wine was then aged in oak for around 12 months. Bottle aged for more than one year to achieve more rounded tannins. The oak stands out coupled with intense spice. If we swirl the wine in the glass, we get aromas which are typical of the Tempranillo grape variety as well as fruits of the forest. Tasting Note: A gentle palate with moderate ageing. The oak is well balanced to maintain the wine’s freshness. Touches of cedar and oak. As the wine ages, smooth tannins come out in the retro nasal stage. Food Match: We have paired this with Spicy Sausage & Cream Cheese Rigatoni
Alegra Rueda Verdejo
This authentic Verdejo reflects the continental climate of Rueda; where warm, sunny days and cold nights produce fresh and intensely aromatic wines. Tasting Note: Fresh, fruity and with a herbaceous touch (in fact, the word verdejo comes from green). Food Match: We have paired this with Chicken and Chestnut Mushroom Gnocchi Pie
