The Mimic Shiraz Jumilla
The Mimic Shiraz is unashamedly a wine which takes its style and inspiration from its Aussie counterparts and definitely sticks it to them with its big smooth, fruity style. Made in the South Eastern Spanish region of Jumilla, the Mimic Shiraz grapes are carefully harvested at the moment of optimum ripeness before undergoing pressing to extract all the juice. The must then spends an extended period of time on its skins and temperature controlled fermentation to extract the maximum fruit freshness from the grapes. After fermentation, 80% of the wine spends 3 months in French oak, before blending with the unoaked wine and bottling. Tasting Note: This is a big and fruity red from Jumilla - a really warm part of Spain. This wine is perfect for people that like big, bold and spicy flavours.
