The Italian name of Pinot Grigio spans many countries and can vary from an incredibly approachable, soft, easy-drinking wine to something more flavoursome in style. It’s typically light to medium in body, brilliantly food friendly and best drunk young and fresh. You’ll often find quite a punchy acidity about the wine, which is retained by early picking of the grapes.
Tasting Note:
White peach notes, slight citrus tings and a hint of pear. An element of perfume and light spice round off what is a light, easy-sipping white, while you may also experience additional flavours of honeysuckle, green apple or even grapefruit.

The Accomplice Shiraz
Fresh berry fruits integrating well with a touch of spice and vanillin oak. The parcels of Shiraz for this wine were selected by the winemaker for the lifted berry characteristics that are notable in this wine style. Fermented on skins for five to seven days at 20-24°C with American oak. Tasting Note: A medium bodied Shiraz that shows vibrant redcurrants and dark cherry flavours, showing a hint of sweetness. Smooth, soft oak tannins finishing with peppery spice. Food Match: We have paired this with Irish Beef with Black Bean Sauce, Basmati Rice & Kale
Montsable Pinot Noir
The wines of Montsablé are inspired by the desire to craft elegant Burgundian varietals from Southern France. Working with growers in cooler sites of lower vigour, we seek out fruit that delivers pure flavours and great balance. In the winery, the fruit is handled carefully to build texture and mouthfeel, with oak only ever used to add just the most subtle of seasoning. The result is a Chardonnay with great palate weight, bright fruit and texture while our Pinot positively sings with lifted cherry and wild strawberry fruit. Tasting Note: This classic Burgundian variety has been produced in the sunny climate of Languedoc in the south of France. Although much warmer than the cool climate of the Cote d’Or great care has been taken to ensure that it is every bit as elegant. The nose is aromatic with fresh cherries, strawberry and bramble and just the faintest hint of vanilla. On the palate there is tremendous depth to the fruit which is supported by an underlying minerality and beautifully balanced acidity. Food Match: We have paired this with Pork & Leek Sausage with Wild Mushroom Rigatoni
