The Mimic Shiraz is unashamedly a wine which takes its style and inspiration from its Aussie counterparts and definitely sticks it to them with its big smooth, fruity style.
Made in the South Eastern Spanish region of Jumilla, the Mimic Shiraz grapes are carefully harvested at the moment of optimum ripeness before undergoing pressing to extract all the juice. The must then spends an extended period of time on its skins and temperature controlled fermentation to extract the maximum fruit freshness from the grapes. After fermentation, 80% of the wine spends 3 months in French oak, before blending with the unoaked wine and bottling.

This is a big and fruity red from Jumilla - a really warm part of Spain. This wine is perfect for people that like big, bold and spicy flavours.

What began as a small winery with a few wines has grown into a real top-quality vineyard through the four generations. This light lemon coloured wine has crisp citrus fruit flavours with really refreshing acidity. A lovely modern style. Good aperitif wine or with a variety of summer dishes.
