Pan fried Irish Cod with Kale Colcannon

Colcannon is a mixture of creamy mashed potatoes and usually kale or cabbage. In this colcannon recipe, we mix the mashed potatoes in with chopped cooked kale, spring onions and butter. Add in delicious fresh cod cooked in lemon and you have a healthy, traditional Irish dish ready in 30 minutes!
