Bodegas Manzanos Castillo De Enériz Chardonnay

Beautiful unoaked Chardonnay from Navarra in Spain. 100ha of vineyards are planted on clay-limestone soil at an average height of 400m above sea level. Meticulous attention to detail in the vineyards, coupled with the extreme climate, offer the perfect conditions for the production of great wines. Grapes are all hand-picked in early October. Fermentation in stainless steel vats at a controlled temperature and matured on the lees. Tasting Note: Very bright lemon yellow colour with an intense tropical and stone fruits aroma. Fresh, with a typical silky touch on the mouth. Food Match: We have paired this with Kish Fish Wild Atlantic Haddock, Beetroot & Butter Basted Potato Cakes, Charred Scallion, Broccoli & Wild Garlic Pesto

We’ve decided to add it into our golden brown hashes along with a sprinkle of Basil to help enhance the overall fresh flavours in this classic breakfast.
Bodegas Navajas Rosado A family winery that was founded in 1918 as Bodegas Arjona, but in 1983 the Navajas family became the sole shareholders and changed its name to Bodegas Navajas. Navajas believes that the quality of the wine begins in the vineyards and for this reason they monitor and control the vineyards which belong to their growers in the Rioja Alta and Rioja Baja. Tasting Note: It has a pale pinkish, salmon-colored color, typical of rosé wines from this area. It has a soft aroma of ripe fruit and flowers that together with its light but broad taste is manifested throughout its “journey”, leaving a fresh and warm finish on the palate. Food Match: We have paired this with Chipotle Haddock with Avocado and Crispy Baby Potatoes
Campo Flores Tinto Orgánica Campo Flores Tinto is composed of 3 parcels of Tempranillo, Garnacha & Syrah. The Tempranillo is old bush vine grown on meagre, gravely soil and is hand harvested. Tasting Note: An intense succulent, juicy red wine. Supple ripe strawberry and blackcurrant fruit provides with a warming spicy finish. Food Match: We have paired this with Spiced Chicken & Bulgar Bowl with Sweet Tahini Sauce
Domaine de Vedlihan Syrah A limited release Syrah, produced only in exceptional vintages. The grapes for this cuvée were harvested from 40 year old vines. The Syrah grapes were de-stemmed and macerated in tank. Ageing takes place predominantly in stainless steel with a fifth aged in oak. This is a vegan/vegetarian wine. Tasting Note: Alluring aromas of violet give way to a palate of complex fruit and spice with a robust structure. Well made delicious wine with a long lingering finish. Food Match: We have paired this with Irish Beef Burritos.
