Indy's Buckwheat Pancake Bonanza.

Indy Power has created one of the best Irish healthy food websites ‘The Little Green Spoon’ and the great news is that she now has a cookbook out too!
Click on the photo so see her full recipe.

1 cup of buckwheat flour, 2 eggs, 2 tbsp of honey, 2 tbsp coconut oil (melted), 1tsp of vanilla, 1tsp baking powder, 1 cup of milk.

  • Add everything except the milk to your food processor and start processing!
  • Once the process has completed and your ingredients are well and truly blitzed, gradually add in the milk until you have a thick runny mixture.
  • Stir in some blueberries then pour onto a hot pan.

Our friends at Wyldsson also have a great buckwheat pancake mix you can buy from their website as well as some delicious toppings. We highly recommend the hazelnut and cocoa spread (see next photo) for a guilt free alternative to nutella.
